- 1 portion wide wheat noodles (knife-cut, ramen, or udon)
- 3 cloves garlic, finely minced
- 2 scallions, thinly sliced (whites and greens separated)
- 1 tbsp coarse chili flakes or Gochugaru
- 1 tbsp toasted white sesame seeds
- 1.5 tbsp neutral high-heat oil (avocado, peanut, or vegetable)
- 1 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1 tsp Chinese black vinegar (or rice vinegar)
- 1/2 tsp sugar
Instructions
Boil the noodles in salted water until al dente, drain thoroughly, and transfer immediately into a heatproof ceramic serving bowl.
Pile the minced garlic, scallion whites, coarse chili flakes, and toasted sesame seeds directly on top of the center of the warm noodles.
Drizzle the light soy sauce, dark soy sauce, black vinegar, and sugar around the edges of the noodles.
