"Zero Raw Butchery on Service Day"

On the day of your dinner, you should never have a chef's knife in your hand for raw meat or fish. Every protein must be fully trimmed, portioned into exact grams/ounces, and dry-brining or marinating in labeled Cambro containers. Service day is exclusively for finishing sauces, temperature control, and synchronized plating.

Day-by-Day Kitchen Production Roadmap

Days 1 & 2 (Mon–Tue)

Supplier Sourcing & Inventory Ordering

  • Sort your master grocery list into 3 vendor buckets: wholesale meat/seafood purveyors, farmers market produce, and specialty dry importers.
  • Order food-grade Cambros, colored labeling tape (red for hot, green for cold), and printed menus.
  • Review guest RSVP notes for allergy disclosures (shellfish, celiac, tree nuts) and calibrate course alternatives.
Days 3 & 4 (Wed–Thu)

Long-Lead Stocks, Reductions & Infusions

  • Simmer master bone broths, dashi, or roasted vegetable stocks (strain and chill immediately in shallow hotel pans).
  • Make compound herb butters, chili oils, quick-pickled radishes/onions, and dry spice rubs.
  • Produce and freeze dessert elements: ice cream bases, sorbets, or pâte sablée doughs.
Days 5 & 6 (Fri–Sat Morning)

Portioning, Pastry & Wet Prep

  • Butchery: Trim, portion, and weigh all proteins. Pack in labeled containers with butcher paper separators.
  • Greens: Triple-wash, spin dry, and store delicate herbs/greens in perforated hotel pans lined with damp kitchen towels.
  • Baking: Par-bake focaccia or sourdough breads to 90% completion so they only require a 5-minute flash bake at service.
  • Test your induction burners and battery-powered timers.
Day 7 (Service Day Countdown)

Load-In, Line Setup & Service

T-Minus 3 Hours: Load into venue. Check walk-in temps. Turn on induction units.

T-Minus 2 Hours: Stage 20 service plates per course on warmers/linen tables.

T-Minus 1 Hour: Front-of-house server briefing. Review dietary seat assignments.

T-Minus 15 Mins: Light candles, start ambient playlist, pour welcome drinks.

7:00 PM: Doors open. Service commences.
